Summer is in full swing, and the 4th of July is just days away. Celebrating our nation’s independence is a big deal for most Southwest Floridians. That celebration typically involves grilling out. I always like starting out with a rose or a sparkling wine or both. They are good to enjoy while snacking, waiting for the coals to heat, or the meat to marinate. One thing to keep in mind is the temperature of the wine, even the reds. Don’t let them get warm during your celebration. Sometimes you just need a glass of wine to “chill” with while the food is being prepared and cooked. Lighter bodied wines, both red and white, are ideal for this. Wines with more structure are typically best with food. However, that does not mean you can’t enjoy them solo as well.
One of the biggest things to be mindful of when it comes to wine and grilling is temperature. Of course the grill will be hot, but you certainly don’t want the wine to be hot or even slightly warm. When wine is too warm, alcohol flavors dominate. The fruit characteristics and other nuances will be overshadowed. Even red wines need a chill. Remember room temperature in Florida is not room temperature in a cellar. Once your wine is poured it has no where to go but up, in temperature. For this reason, it is even OK if it is a bit overchilled to begin with. It’s easier to warm up a wine in the glass then to cool it down.
