Acclaimed Chef Gavin Kaysen Unveils The Merchant Room at Naples Beach Club

Two-time James Beard Award winner Chef Gavin Kaysen brings his acclaimed culinary voice to Southwest Florida with The Merchant Room, debuting at the new Naples Beach Club, A Four Seasons Resort. Steps from the Gulf and set beside the resort’s airy, sunlit lobby, the restaurant offers a refined yet relaxed Naples ambiance, with an expansive terrace overlooking the pool and coastline.

At The Merchant Room, Chef Kaysen blends his French training with the flavors of Southern Florida, crafting a New American Brasserie rooted in local ingredients and warm hospitality. The menu showcases his signature techniques—from an in-house dry aging program producing richly flavored steaks to a handmade pasta program inspired by Minneapolis’ flour–milling heritage. Gulf seafood plays a starring role, reflecting the chef’s excitement to cook in a kitchen just yards from the ocean.

“My goal is to marry the comfort-driven cooking of the Midwest with the abundant produce and seafood of Naples,” says Kaysen, marking his first restaurant outside Minnesota and his second collaboration with Four Seasons.

The bar program complements his cuisine with revived classic cocktails reimagined through Florida’s vibrant citrus and local botanicals. A meticulous wine list emphasizes sought-after French allocations alongside global selections chosen to pair with the evolving coastal menu.

The restaurant’s design celebrates Old Naples, with coastal sophistication, hand-painted botanical murals, wicker chandeliers, and panoramic Gulf views that connect the dining experience to its beachfront setting.
